These Lucky Charms treats come together with only a few simple ingredients, including marshmallows, butter, vanilla extract and of course, Lucky Charms cereal. Not only are these bars delicious, but they're also a fun way to enjoy your favorite childhood cereal in a new and exciting way.
These lucky charms cereal treats are the perfect after school snack or St. Patricks Day party treats for your little ones. They require zero oven time and are whipped up in 20-30 minutes!
WHY YOU NEED TO TRY THESE TREATS
Have you ever seen the Lucky Charms Treats in the store? They are boxed up and come with only like 6-9 in a box. They looked yummy as I passed down the aisle, so I thought to myself, I can make these at home with less ingredients and probably taste better. Was I right! These Lucky Charms Cereal Bars are the perfect nostalgic treat to whip up with your kids, even if you don't have much time on your hands.
And I know what you're thinking...these sound way too sweet given that lucky charms are generally a sweeter cereal. BUT these actually aren't too sweet or overpowering. The combination of butter and salt in this recipe gives these cereal bars a lighter flavor.
INGREDIENTS
With so few ingredients in these treat bars, you'll be well on your way to making these in no time!
- Lucky Charms Cereal: Of course this is the first ingredient, it's really the base of the whole treat. These cereal treat bars pack 10 cups of lucky charms cereal into the recipe! You will want to purchase the family size pack to ensure you have enough.
- Mini Marshmallows: You can utilize any type of regular mini marshmallows. This recipe calls for one 16 oz bag plus 2 cups so you will want to grab two 16 ounce bags at the store.
- Unsalted Butter: I always prefer to use unsalted butter in my baked goods because it allows you to control the amount of salt in the recipe. If you only have salted butter, don't worry, it will do just fine!
- Vanilla Extract: You will want to use pure vanilla extract for this recipe. We will only need about 1 teaspoon.
- Salt: Only a pinch of salt is need for this. If you used salted butter than you can skip adding extra salt.
- Rainbow Sprinkles: I love adding sprinkles wherever possible. These are the perfect treats to do so. I used rainbow jimmies but you can use whatever color assortment you want.
- White Chocolate Candy Coating: I prefer to use Candy-Quick as it melts really easy in it's own tray and will harden quickly. You can find these on Amazon or at your local Target and Grocery Stores. If you can't locate these, baking chips or white chocolate chips will work.
HOW TO MAKE HOMEMADE LUCKY CHARMS CEREAL BARS
STEP ONE: Prep
Line a 9"x13" pan with parchment paper and spray with non-stick cooking spray.
STEP TWO: Melting the ingredients
In a large pot, add butter, vanilla and salt on medium heat until fully melted. Add in marshmallows. Stir occasionally with wooden spoon or spatula.
Continue on medium heat until the marshmallow mixture is fully melted. Stir well.
STEP THREE: Add in lucky charms
Add lucky charms cereal into the large pot, stirring quickly to ensure the marshmallow mixture has completely coated all of the cereal.
STEP FOUR: Spread and cool
Using your spoon, pour all of the lucky charms mixture into your prepared pan. Using your spatula or hands spread out evenly while gently pressing down to form an even layer.
TIP: Spray your spatula or hands with cooking spray or vegetable oil to help prevent the mixture from sticking to your hands or spoon.
Sprinkle the top with rainbow jimmies sprinkles and additional lucky charms marshmallows. Gently press down so they stick to the marshmallow treats.
Place the pan in the refrigerator for 20 minutes to set. Remove and cut into squares. If you used parchment paper, you should be able to pop out of the pan and cut on a flat surface.
STEP FIVE: Dip
Melt your candy coating in the microwaveable tray or bowl for 30 second increments until fully melted. Dip each square ¼ of the way from the bottom of the bars. Place on parchment paper to let set. Once each square has fully harden, they are ready to be enjoyed!
