I'm a huge family gal, and there is no greater feeling than sharing a delicious baked good with my family. This skillet cookie recipe packs all of the amazing flavors you know and love in a traditional s'more and so much more! Grab your family, some spoons, and dig in!
WHY YOU NEED THIS RECIPE
When I started brainstorming delicious summer recipes, nothing sounded better than sitting around the campfire on a stunning summer evening eating some delicious s'mores with my family. So I asked the question, what could top a freshly roasted s'more? And there it was...a giant s'more skillet cookie baked right into a large cast iron skillet that the entire family could indulge in together. Gather around the table and eat this straight from the spoon.
This gooey, chocolatey dessert is packed with every flavor from a traditional s'more in a giant cookie form topped with big spoons of vanilla ice cream.
My favorite part of a s'more is a toasty marshmallow and lots of chocolate. This giant s'mores skillet cookie nails both.
- Graham Cracker: This recipe includes both graham cracker crumbs in the cookie dough and chunks of graham cracker throughout. Plus it has a graham cracker crumb bottom crust.
- S'mores Cookie: First and foremost, this recipe isn't just a regular cookie with some marshmallows and chocolate. It is a true s'mores cookie packed with delicious s'more flavor in every single bite.
- Marshmallows: Mini marshmallows are packed into this cookie recipe for a gooey center and finished off at the end of the bake that gives you that perfect toasty s'more marshmallow.
- Hershey's Chocolate: I love to use Hershey's milk chocolate in this recipe because it's basically the requirement for a s'more in my opinion. It's chopped up throughout and loaded on top. You'll be enjoying puddles of chocolate in every bite.
- Melted Butter: Using melted butter in the cookie dough allows this recipe to come together easily in one bowl and blend the flavors of the ingredients better.
- Ice Cream: This recipe would not be complete if it wasn't topped with scoops of cold, vanilla ice cream. The juxtaposition of hot and cold really seals the deal on this recipe.
INGREDIENTS
These ingredients bring together the nostalgic s'mores cookie skillet recipe blended together in just one bowl. This is where all the fun begins.
- Melted Unsalted Butter
- Dark Brown Sugar
- Granulated Sugar
- Whole Eggs
- Vanilla Extract
- Baking Soda
- Sea Salt
- Graham Cracker Crumbs
- Whole Graham Crackers
- Mini Semi-Sweet Chocolate Chips
- Hershey's Milk Chocolate Bars
- Mini Marshmallows
STEP BY STEP INSTRUCTIONS
STEP 1: Prep
Preheat oven to 375°F.
Grease a 10 or 12-inch cast iron skillet with cooking spray. Measure out ¾ cup of graham cracker crumbs and using your hands or a spatula, spread the crumbs around the bottom of the skillet to create a nice, even crust layer. Set aside.
STEP 2: Mix the Ingredients
In a small heat-safe bowl, microwave butter in 30-second increments until fully melted. Let cool slightly.
In a large bowl, add dark brown sugar and granulated sugar. Pour melted butter into sugars. Using a hand mixer or wooden spoon, mix butter and sugar until smooth & fully incorporated. Add eggs and vanilla and mix until combined.
Add the flour, remaining graham cracker crumbs (½ cup), baking soda, and salt into the wet mixture. Mix on low until just combined. It's okay if not all the flour is incorporated. Add in mini semi-sweet chocolate chips & 1 ¼ cup mini marshmallows. Mix on low, very slowly until just combined. You may also hand mix if you prefer.
Using your hands, break 2 sheets(8 squares)of full graham crackers into pieces. Keep them medium in size, not tiny pieces. Add to the bowl. Add ¾ cup chopped Hershey's milk chocolate into the bowl. I break each square in half instead of using a knife. Using a large wooden spoon or spatula, fold in the graham cracker pieces and Hershey's chocolate until fully incorporated.
STEP 3: Bake
Drop and spread cookie dough evenly in the prepared cast iron skillet directly on top of the graham cracker crumbs at the bottom. Bake for approx. 15-17 minutes. (15 minutes if you like a more gooey cookie and 17 minutes for a more done cookie)
STEP 4: Prep the topping & bake some more
While the cookie is baking, grab your cookie topping ingredients. Break 2 graham cracker sheets into medium pieces, set aside in small bowl. Unwrap approx. 15 pieces of Hershey's milk chocolate and measure out 1 ¼ cup mini marshmallows and set aside in small bowl. You will want these separated, measured and ready to go before the cookie timer is done.
After 15-17 minutes, using oven mitts, remove the cast iron skillet from the oven. It will be VERY hot. The cookie will look underbaked!
Now for the cookie toppings…quickly and carefully place the graham cracker pieces (I press these in a bit), mini marshmallows and Hershey's chocolate squares on top and all around the cookie.
Place back in the oven for approx. 6-8 minutes, until tops of marshmallows are slightly golden brown. Remove from oven and place on a cooling rack for at least 10 minutes. The cookie will continue to bake during this time.
Part 5: Add ice cream & serve
Top with vanilla ice cream
This is best-enjoyed family style, around the dinner table served warm. Grab some spoons and dig in!
*CAUTION* Cast iron skillet will remain hot for a while after removing from oven. If serving with children, please scoop onto a plate for them to enjoy.
STORAGE TIPS
This giant s'mores skillet cookie is best served warm and fresh out of the oven. I do not recommend storing this after it's baked and has been partially eaten. You can bake this recipe and transfer it to a party. Once you arrive at your destination, you could pop it back into the oven for 5 minutes to warm up, add your ice cream and serve.

S'mores Skillet Cookie
Ingredients
For the cookie:

- 1 ¼ cups mini marshmallows
Cookie topping:
- 2 sheets whole graham crackers, each sheet has 4 squares (8 squares total)
- 1 ¼ cups mini marshmallows
- 15 squares Hershey's milk chocolate bars, 1-1.5 regular sized bars
